Get ready to dine at the revamped TV Tower Restaurant, opening its doors on June 3rd! The culinary genius, Tim Raue, is behind the menu and, in an exclusive interview with B.Z., shares his thoughts on "Sphere Tim Raue."

Over fourteen months, Raue has been involved in the project, from the initial discussions to the grand opening – a journey that wasn't a smooth ride. With a "go hard or go home" approach, he ruled every aspect of kitchen planning, design, cutlery, you name it – there's no room for compromise if he's on board!

But the real question is, what's the twist for Berlin foodies? Raue has a challenge: "The dish must satisfy a four-year-old and an 88-year-old grandfather, with everyone in between."

All Things German

Berlin's highest eatery (207 meters) serves German cuisine with a modern twist. Raue intends it to be the place where international guests experience the heart and soul of Berlin. "With contemporary flavors, a kick of spice, and a link to our traditional dishes."

Gone are the days of the popular burger – "A burger isn't Berlin!" says Raue. "Here, we highlight our identity, not with burgers, Prosecco, or Aperol Spritz, but with our very own Berlin Schnitzel!"

Curious about the Schnitzel twist? "We've used pork and developed a crispy breading that stays crunchy on the outside, juicy on the inside, with a hint of warmth. But the cherry on top? A layer of spiced butter!" The Schnitzel will set you back 28 euros.

In the glasses, black, red, and gold make an appearance, too: "We only serve German wines and sparkling wine, German water. Beer and spirits come from BRLO and Mampe."

Does Tim Raue have a dish he can't get enough of on the menu? "Every dish is like my child, and I love all of them equally, but there might be a secret favorite. And that's the delicious Soljanka we've made. The Soljanka with a roll costs 11.50 euros."

What's the secret ingredient in the Soljanka? "A shot of orange oil gives it an extraordinary fruity dimension, especially to the paprika." The Soljanka with a roll equals 11.50 euros.

Fun fact: Tim Raue has used his employees' seasonings, especially those who come from the former East Germany, in the soup!
